The Science:  Enzymes are protein catalysts that reduce the activation energy needed to make a chemical reaction happen.  The reactions occur in the enzyme’s active site which is usually described as a “pocket” with the substrate that the enzyme is acting on fitting tightly in the “pocket”.  One class of enzymes are proteases, and they break down large proteins into smaller bits. (We have them in our stomachs to help digest food!)  This is a sexy song written by a protease to her protein substrate/boyfriend.
